Gluten-Free Chorizo Breakfast Pizza

I love chorizo.  Like I may be slightly obsessed.  But hey, I like what I like!  I was in San Diego a few weeks back and that just only enhanced my chorizo obsession.  I have a few recipes up my sleeve for you all!  But first, this breakfast pizza, because breakfast is my favorite meal of the day and well pizza. That really needs no explanation!

Pizza is totally my comfort food and I literally want to throw things when a pizza commercial comes on the TV, because yes, my mouth waters.  I created two pizza crust recipes in my cookbook, All American Paleo Table, one that is nut free and one that is not, because I wanted everyone to enjoy pizza! I personally like the crispy, thin crust pizza crust (the one with nuts) the most and usually make up a few to keep in the freezer for days when pizza cravings happen…because trust me, the cravings happen a lot!

The fabulous thing about this pizza is that it combines salty, spicy and creamy flavors with a mixture of chorizo, gooey cheese and runny egg yolks.  But even better, you can eat this and feel great—no bloating or tummy aches because the ingredients are just that great! See now grain free and gluten free pizza will make you happy and healthy!

Grain-Free Chorizo Breakfast Pizza

Ingredients

  • 1 grain-free thin, crispy crust (recipe from All American Paleo Table pg 186 )
  • 1/4 cup good quality mayonnaise (I used Sir Kensingtons)
  • 1/2 lb spicy chorizo sausage, cooked and crumbles (recipe from All American Paleo Table pg 20)
  • 1 poblano pepper, thinly sliced
  • 3 eggs
  • 4 oz mozzarella cheese, shredded

Directions

  • If you have not prepared your crust, follow the instructions to do that first.
  • Preheat the oven to 375 degrees F.  Line a large baking sheet with parchment paper.
  • Spread a thin layer of mayonnaise across the crust just so that the crust is lightly covered.
  • Layer with chorizo crumbles and poblano peppers.  Crack the eggs on top of the pizza, arranging throughout.  Sprinkle the cheese on top.
  • Bake for 15 minutes or until the cheese is starts to turn golden brown and bubbly.
