{Enjoy this recipe from Day 2 of my Everyday Grain Free Eats where I am challenging you to eat one meal per day that is grain free.}

I had a friend in college who used to make us popcorn every night we studied together.  Usually about 10:30 pm, the popcorn machine and butter would come out, well most nights it was homemade and some nights it was microwaved! Oh you got to love college.  Some nights popcorn made its appearance in the library, braving the endless snowstorms and late nights of studying.  It seemed like the more we studied, the more popcorn we ate! Ok ok, maybe I am exaggerating.  Popcorn has always been one of my favorite snacks—salty, buttery and crunchy deliciousness.

So I came up with these toasted coconut crisps.  The flavor and texture reminded me of popcorn!  I am the girl who would take salty and savory over sweet any day.  After playing around with a few flavors, burning endless bags of coconut in the oven because I forgot to set a timer, I finally came up with these grain free smoky, salty coconut crisps! And oh my, warning you that you will want to eat the whole batch.

Watching movies just isn’t the same without popcorn, but this is my favorite grain free alternative for something salty and crunchy!  You also can make simple dessert parfaits with layers of whipped coconut cream, pomegranate seeds or your favorite fruit and these smoky coconut crisps.  These salty crispy bites are the perfect treat to satisfy your sweet cravings!

These grain free and paleo coconut crisps are a great afternoon snack or addition to your child’s lunch and are completely sugar free.  Coconut is full of healthy proteins and fats keeping you satisfied longer.  I use have used Let’s Do Organic thick coconut flakes and Bob’s Red Mill for this recipe as well.

Smoky, Salty Coconut Crisps

A grain, gluten and nut free crunchy snack without added sugar that is simple to make and full of smoky and salty flavor.  Coconut crisps are a healthy alternative to chips or popcorn and are Whole 30 & 21dsd friendly.

Ingredients

Directions

  • Warm a nonstick skillet to medium low heat.
  • In a bowl, toss together coconut flakes, salt and spices.  Add to the skillet and sauté for 2-5 minutes or until fragrant and golden brown.
  • Remove from the pan and toss in remaining smoked sea salt flakes.  Cool completely.
  • Enjoy!

To make it a parfait

Layer heavy whipping cream or coconut cream (for dairy free) with pomegranate seeds and a sprinkle of toasted coconut flakes for a sugar free dessert option.
