A Taste of Provence: Lavender Cookies Inspired by Southern France

Last summer, my mother and I went on an unforgettable journey through the tiny, winding roads of Southern France. We explored mountainside towns, met talented local artisans, and strolled through colorful farmers’ markets. One serendipitous stop was at a farmer’s lavender stand—an old farmhouse surrounded by fields of aromatic lavender.

The farmer, a lifelong lavender grower like his father before him, shared stories about the traditional methods of extracting lavender oils and the vibrant purple countryside during the harvest season. Before we left, he handed us a bag of bright red cherries to enjoy on our drive—a small, sweet gesture that made the experience even more memorable.

Inspired by this beautiful adventure, I created this recipe for lavender cookies, a nod to the flavors and aromas of Provence. These buttery treats blend the floral notes of lavender with the earthiness of rosemary, making them the perfect accompaniment to tea, coffee, or a quiet moment of indulgence.

Enjoy this buttery cookies or as the French would say les biscuits!

Lavender Cookies Recipe

Ingredients:

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1/2 tsp baking soda
  • 5 tbsp butter, softened
  • 1 tbsp maple syrup or raw honey
  • 1 tsp vanilla extract
  • 1 tbsp dried lavender
  • 2 tsp fresh rosemary, finely chopped
  • Raw honey (optional, for brushing)

Directions:

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a small mixing bowl, combine almond flour, coconut flour, baking soda, and finely chopped rosemary.
  3. Using the back of a spoon or mortar and pestle, gently crush the dried lavender to release its aromatic oils. Add it to the dry mixture.
  4. In a separate bowl, whip together the softened butter and maple syrup (or honey) until creamy. Gradually fold in the dry ingredients until the dough forms.
  5. Shape the dough into a log and wrap it in waxed paper. Refrigerate for at least 1 hour.
  6. Slice the chilled dough into 1/2-inch rounds and place them on the prepared baking sheet.
  7. Bake for 10 minutes or until the edges are lightly golden.
  8. Let the cookies cool for a few minutes on the baking sheet to firm up, then transfer them to a cooling rack.
  9. For added sweetness, brush the warm cookies with a touch of raw honey.
