Lets face it, comfort food is really the best and definitely needed sometimes, well mostly all the time! Since I started eating grain-free over 3 years ago, egg scrambles topped with any flavor of cheese and fresh herbs has become my go to comfort food. When my husband was deployed last year, I used to eat eggs for dinner sometimes after a long day as it was just homey and comforting. Eggs are one of the most nutritious foods to eat and something I look forward to each morning. Eggs will keep you energized throughout the morning as they are full of protein and healthy fats. You can dress them up or just simply add a drizzle of pesto and sprinkle of parmesan.
This past month has been challenging as I have been struggling with my health, in the hospital and just attempting to regain my strength and adjust to life once again. I will be sharing more of my journey soon, once I find the words to say. But, as I was laying in that hospital bed completely exhausted and miserable, I was dreaming of pizza, homemade meals and returning to what I love doing! So this past week I picked up my camera once again and found joy in cooking, creating and photographing. Its the little things in life that make each day joyful and fun! Trips to the farmers market, bright yellow sunflowers and delicious meals out with family and friends have taught me to take it slow, enjoy life’s simple moments and learn to relax (theres a lot of fun and inspiration on my Instagram!).
But now back to pizza! I have been craving pizza (my grain free thick crust pizza is my favorite but takes a little more time) so I came up with these mini egg frittatas for a simple, grain free take on the classic comfort food. They are so easy to make and provide a delicious breakfast or even dinner. You can even reheat any extras the next day! The eggs are baked with fresh mozzarella in the middle so when you bite or slice through the frittata, melted mozzarella will spill out! I baked them with pepperoni on top and love Applegate’s as it is made with sustainably raised pork and slightly spicy adding great flavor to these grain and gluten free pizza bites. You could also crumble these beef breakfast sausages into the pizza bites as well. Top with warm pizza sauce and a sprinkle of salty parmesan for savory taste with each bite. Enjoy!
Grain Free Pizza Frittata Bites
Grain, gluten, nut and starch free pizza frittatas. A healthy twist on classic pizza made with fresh mozzarella and drizzled with pizza sauce and parmesan.
makes 12 small egg frittata cups
Ingredients
- 6 eggs
- 1/2 cup raw milk or cream
- 2 tablespoons coconut flour
- 1/2 tsp Celtic sea salt
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp garlic granules
- 1/4 tsp fresh cracked black pepper
- 8 oz fresh whole milk fresh mozzarella balls (I used mini sized)
- 12 slices pepperoni (I like Applegate)
- 1/2 cup parmesan cheese, grated
- 1 cup pizza sauce
{butter for greasing muffin pans}
Directions
- Preheat oven to 350 degrees F. Generously grease muffin pan with butter.
- In a large bowl, whisk together eggs, milk, salt and other spices. Sift in coconut flour and continue mixing until smooth.
- Pour egg batter into muffin pans, filling half way full.
- Drop 2 small mozzarella balls into each egg section then place pepperoni on top. If you are using large mozzarella or pepperoni slices just slice them and stack on top to fit into the pans.
- Bake for 12-14 minutes or until egg batter is fully cooked.
- While the eggs are baking, warm pizza sauce on the stove.
- Serve hot drizzled with sauce and a sprinkle of parmesan.
This and That
- You can add in whatever herbs or meats you may have on hand such as crumbled beef breakfast sausage or even chicken sausage.
- I like this organic pizza sauce as it does not have any added sugar (most sauces do!) and has great flavor.
