Waffling-waffling-yea! I totally just came up with that little jingle, yes, I quite possibly am talking to my computer and my puppy dog as I am typing this blog post for you all!
Working from home is awesome, but at a certain point of the day, I start to go crazy, and thats usually when I say time for a coffee shop afternoon. I am so thankful for so many close friends that also work from laptops and camera bags, so we can hang out together and work, or take pretty pictures of our coffee and call it work!
Maybe I drank too much coffee this week, or maybe I am just totally excited about life, but whatever the case, these waffles make me so happy!
Truth be told, I dream in food! There are so many foods and flavors out there and I honestly just want to “eat all the things” as I like to say! Yes, yes I know you do too!
I have been wanting to create a savory waffle for a while now. One that holds up, that is slightly crispy and one that you can flavor, sprinkle and drizzle to your hearts content! I’m thinking delicious, savory, messy thoughts over here—eggs Benedict, grilled cheese, avocado toast, chicken and waffles, breakfast sandwiches and so much more!
So you give you the grain and gluten free savory, herb waffles—oh and yes they are made in the blender with the touch of a button, simple for the win!
A few things about these waffles. First, I very carefully testing these waffles multiple times, so I will not be providing substitution requests. Second, nut-flour based waffles can burn easily and get dried out. Every waffle iron is different so I recommend playing with the settings on the first waffle to make sure you have it right.
Third, they for sure need some toppings like butter, Hollandaise, caramelized onions, poached eggs or whatever your heart desires. Pretend they are a gluten free and grain-free flatbread and add all your favorite toppings! Otherwise you will probably think they are too dry and that would make me sad. No sad waffles over here ok!
I am totally having the fried chicken from my cookbook with these waffles tonight! Oh happy day!
Grain-Free Savory, Herb Waffles
makes 8 round waffles
Ingredients
- 1 cup coconut milk, full-fat & unsweetened
- 5 eggs
- 1 cup blanched almond flour
- 1/4 cup coconut flour
- 3 tbsp arrowroot flour
- 1 tsp baking soda
- 1/4 tsp sea salt
- 2 oz parmesan cheese, shredded
- 2 tbsp extra virgin olive oil
- 2 tsp lemon juice or a.c.v.
- 2 tsp fresh thyme
- 2 tsp fresh rosemary
coconut oil, for brushing on waffle iron
Directions
- Warm a waffle iron to medium-low heat.
- Add all the ingredients to a blender. Blend just until smooth, should only take about 15 seconds.
- Brush both sides of the waffle iron with coconut oil. Spoon a large spoonful of waffle batter into the center of the iron, filling about 2/3 full.
- Cook until your waffle iron signals the waffles are done.
- Enjoy warm topped with your favorite sauces and flavors.
