Grain-Free Avocado Toast 4 Ways by Colorful Eats

The weather is getting warm here at our house and my husband and I have loved sitting outside in the afternoon on our patio!  Right now it doesn’t get dark until about 9:30 at night, so we have been attempting to adjust slightly to the Spanish time schedule and soaking in the most sunny hours.  For more on life here in Spain, read my latest post HERE!

Most nights we have been lighting our Big Green Egg and smoking meat or veggies and grilling steak.  As much as I love to eat, I really don’t like doing dishes, so most nights we just throw all our meat and veggies on the grill and then I will make a side salad or some sort of appetizer.  It has been super nice just to be able to rest a bit more and sit outside as the sun sets, rather than stress over the bustle of food preparation and clean up!

Enter avocado toasts, these healthy little bites of happiness that pretty much decorate themselves!

 

Grain-Free Avocado Toasts 4 Ways by Colorful EatsGrain-Free Avocado Toasts 4 Ways by Colorful EatsI have been adding a bit more carbohydrates to my diet—well nourishing carbohydrates as I like to call them—and looking for some sources other than potatoes and root vegetables.  Nourishing carbohydrates, even for someone like me with blood sugar issues (Type 1 Diabetes), are very important to your overall hormone health.  I have noticed that when I eat more nourishing carbohydrates, still in very small amounts, my adrenal glands and female hormones have significantly improved, as well as my hunger levels.  I am not a big fan of snacking, so I find that when I get a small amount of carbohydrates in during lunch and dinner, my cravings and sugar cravings are significantly decreased.

To make these grain-free avocado toasts, I actually used Yucan Crunch Crackers from Mission Heirloom (one of my favorite restaurants and the owners are just gems)!  And yes, they ship via Amazon Prime, so chances are, you will be able to get them too!  These Yucan Crunch Crackers are grain-free, gluten-free and nut-free made entirely of yuca root, a starchy root vegetable.  Keep in mind they are not low in carbohydrates, but they are a source nourishing carbohydrates and fiber!

The avocado toasts are very filling so you only need a wee bit of the crackers and then pile high with your favorite toppings!

Grain-Free Avocado Toast 4 Ways

1/4 a cracker has about 20 grams carbs (this was filling enough for me)

Basic Avocado Toast

Prosciutto, Arugula Avocado Toast

  • prosciutto slices
  • arugula
  • olive oil, for drizzling on top

Mediterranean Avocado Toast

  • sun-dried tomatoes
  • olives
  • fresh basil
  • dried oregano

Spicy Feta Avocado Toast

  • feta cheese crumbles
  • hot sauce

Put-an-egg-on-it Avocado Toast

  • butter, for spreading on crackers
  • soft boiled eggs
  • sesame seeds, for garnish

Directions

  • Toast the Yucan Crunch Crackers according to package instructions.
  • Carefully spoon mashed avocado on the toasted crackers and spread out evenly.
  • Pile high with your desired toppings.
  • Garnish with a few pinches of sea salt.
