To me, food should be comforting and something that makes you happy, and this paleo friendly pasta dish will do just that! It is warm, flavorful and comforting but will leave you feeling satisfied and great afterwards.  Pesto and prosciutto are some of my favorite foods, yes I often eat this pesto by the spoonful because it is just that good! I decided to combine all these flavors and serve them over zucchini noodles.

You can easily turn any vegetable into noodles with a spiralizer, which is the best kitchen investment!  If you have missed twirling your fork in your noodles, this little contraption is for you.  And to be honest its kind of fun to do, ok yes I am a kid at heart!

I share my favorite comfort food dinner over on Paleo Parents blog! Check out the recipe here.

Hi Caroline, just wanted to let you know how much I enjoy your blog! I will be trying this recipe out (can’t wait to make the macadamia pesto!) very soon. I used to own the scrapbook store you and your sister would come too, and it’s a pleasure to see what a lovely young woman you’ve become 🙂 I ran into your mom awhile back and she told about your endeavors. I’m looking forward to your cookbook! Congratulations ~ Shelly Blizard (formerly of Memories in the making)
