Rainy days call for tomato soup and fresh biscuits! Although is perpetual summer here in Hawaii, a few gloomy days of rain and thunder meant lots of baking and Christmas decorating.

My favorite soup is creamy tomato basil, but I decided to try something different this time. I love cream based soups but wanted to make a lighter version with roasted vegetables to bring out a sweetness of natural flavors. A dollop of crème fraîche or sour cream is an absolutely necessary topping. Use grain free sandwich bread or grain free biscuits to dip in this delicious roasted soup! My husband even asked for a second bowl, so it must be pretty tasty!  Serve a cup of this delicious roasted tomato soup for a warm winter meal.

Roasted Tomato Red Pepper Soup

Ingredients

  • 1 lb fresh tomatoes
  • 1 red bell pepper
  • 1 red onion, medium
  • 1 small head garlic, pealed
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp salt
  • 1/2 tsp fresh cracked black pepper
  • 1 tsp oregano
  • 3/4 cup chicken broth, homemade preferably
  • 15 oz tomato sauce, canned

{creme fraiche & chives to top}

Directions

  • Preheat oven to 375 degrees F.
  • Cube tomatoes, red pepper and onion.  Place on baking sheet.  Drizzle with olive oil and sprinkle with seasonings. Slice butter into small pieces on top of vegetables.  Roast for 30 minutes, stirring halfway after 15 minutes.
  • Allow roasted vegetables to cool for 10 minutes. Purée vegetables, broth and tomato sauce in blender until smooth, scraping down the sides several times while blending.
  • Heat tomato soup in a sauce pan allowing the soup to slowly simmer for a few minutes to blend the flavors together. Serve hot topped with crème fraîche and chives.
  • Use biscuits or sandwich bread to dip in soup!
