This recipe is one of my initial recipes I created way back in the day, well only like 2 years ago now.  Back when I had no clue how to create recipes or photograph, yes the pictures date back to the days my iPhone 4, oh my!  Part of me wanted to keep the initial photos to show how far I have progressed, but then my mom mailed me these adorable little candy cups and I knew they needed to be filled with chocolate.  So, I gave the photos and instructions a much needed makeover.

An oldie but a goodie, and something I make quite frequently, this recipe still remains one of my absolute favorites because it is full of nutrients, energy boosting nutrients too, and is perfect when wanting a bit of chocolate!  These grain free, sugar free option and Paleo chocolate fudge bites come together in a matter of minutes and are a one mixing bowl spoonful of chocolatey deliciousness!

Raw cacao and maca powder are wonderful superfoods, see my milkshake recipe post, that help boost your adrenals and energy levels.  I love to eat one or two of these in the afternoon for the perfect, healthy snack.  I also sprinkle a bit of sea salt flakes on top because I love everything salty!

Because coconut oil melts at 76 degrees, they will melt quickly in your hands so be sure to keep them cool until ready to enjoy!  They are a bit messy at times, but so yummy, don’t blame me if they quickly disappear.  I usually double the recipe when I make them, because I find that if I have healthy snacks on hand in my house, I am much less tempted to eat other snack foods.

Paleo Chocolate Fudge Crunch Bites

Fills about 10-12 mini candy cups

Ingredients

*Like all of my treats, these are not overly sweet, but designed as more of a snack than dessert.  I usually make them without any added sweeteners, but that can be left up to your taste preference.  Omit for 21 Day Sugar Detox.

Directions

  • Place all ingredients in a mixing bowl.  Use a hand mixer to blend together until smooth.
  • Place mini candy/cupcake liners in a mini cupcake tin (if you do not have one, you can place on a baking sheet).  Use a small spoon to scoop the fudge into the cups, filling mostly to the top.
  • Garnish each candy cup with a pinch of sea salt flakes.  Place the baking sheet in the freezer for 15 minutes before eating.  Store remaining bites in the refrigerator (for up to 10 days) and eat as desired.

    I tried these tonight but had to make some revisions. I subbed the almond butter for sun butter to make them school friendly, and used hemp hearts instead of coconut since my kid hates it. They were AMAZING! so creamy and delicious. They are the perfect nibble for when I have a major chocolate craving (which is often).
