Carrie Vitt of Deliciously Organic was one of the first blogs I started following in college when I was diagnosed with diabetes and started eating grain free.  Her blog has pretty much a recipe for everything you could want to make and I love how she passionately shares her story and recovery from an autoimmune disease.  She truly is an inspiration to me and proof that healthy eating and nutrition can profoundly influence your life for the better!

Her latest cookbook, The Grain Free Family Table, details her journey of using food to ultimately heal her health but written in a way that is practical for busy moms, working people and kids.  She really encourages a kitchen and table centered approach and has practical tips for how to get the whole family involved in the cooking and eating process, something I absolutely love!  Obviously when I got the book in the mail, I opened it straight to the dessert section and can’t wait to try her cinnamon rolls and waffle cones—all made grain free and Paleo!

 

Today I am sharing a recipe from The Grain Free Family Table, and truth be told I struggled snapping these photographs because I wanted to eat them all!  These grain free cheesy sausage bites are perfect to take to a potluck or Holiday party and even great for football watching snacks!

I didn’t have spicy sausage on hand so I used breakfast sausage from US Wellness meats, and they were absolutely fabulous! I drizzled a few drops of hot sauce when we ate them for breakfast with eggs.

Sausage Cheese Balls from The Grain-Free Family Table

A grain free, cheesy meat ball baked in the oven till crispy. Recipe from The Grain Free Family Table.

Ingredients

Directions

  • Preheat the oven to 425 degrees F and adjust the rack to the middle position.  Line a baking sheet with unbleached parchment paper.
  • In a large mixing bowl, whisk together the almond flour, coconut flour, salt, baking powder, garlic powder, and cheese.  Use your hands to incorporate the sausage into the dry mixture.  The mixture will be damp.
  • Roll the mixture into 1 1/2-inch balls and place on the prepared baking sheet.
  • Bake for 25 minutes, until just golden brown.  Cool for 5 minutes and serve.
